Cafe Jack began with love.

It started in our kitchen, during a time when my wife was struggling with her sinus condition. I was searching for something — anything — that could help her feel better. In that search, I discovered kimchi and its powerful, natural bacteria known to support the body and help fight infection. It felt hopeful. But more than that, I wanted to turn something medicinal into something magical.

I didn’t want her to eat it because she had to.
I wanted her to crave it.

On one of our date nights, she told me how much she loved baked sweet potatoes — warm, soft, comforting. That simple detail stayed with me. The natural sweetness of a baked sweet potato felt like the perfect harmony for the bold, vibrant tang of kimchi.

Being British, the classic jacket potato has always been close to my heart — humble, comforting, nostalgic. So I combined the two worlds: the flavours of Asia with the presentation of a British classic. What started as a gesture of care became a concept. What began as comfort food became a story.
